A dining room of regulars and few new faces
Good cooking, a reasonable price and almost nobody new.
La Fábrica had its usual crowd and little else.
Gonzalo depended on people passing by in the street. Anyone looking for somewhere to eat on their phone could not find it, or came across a listing with no photos and no menu.
Every day people walked past without coming in. From outside, you could see nothing of what was being cooked inside.
What changed in two months
A record for set menus served in a single day.
Two months after starting.
New people joined the regulars: people who used to walk past and now come in because they have seen the menu and the photos on their phone.
The cooking and the price are the same. What has changed is what you can see before you walk through the door.
